Last Friday I couldn’t resist buying a liter of fresh blueberries at the Farmers’ Market. I love these wild berries for they taste way better than the store-bought ones and are a perfect snack. Finally, they make an amazing pie filling!
Here is a simple recipe to follow if you fancy a tasty summer dessert:
For the Dough:
- 200g unsalted butter (at room temperature)
- 300g all-purpose flour
- 1/2 teaspoon salt
- 25 g sugar
- 3 tablespoons water
- 1/4 teaspoon baking powder
For the Filling:
- 500g fresh wild blueberries
- 3 teaspoons cornstarch
- 80g sugar
- 2 tablespoons lemon juice
- Combine all the ingredients to make a dough.
Make sure to always sift flour and baking powder. Your dough will have a perfectly light and smooth texture. - Refrigerate the dough for at least an hour.
- In the meantime you can prepare your filling: wash the blueberries and carefully mix them with all the remaining ingredients.
- Roll out the chilled dough and place it into your pie dish, push it to the sides. Save a little bit to put on top!
- Spread the filling evenly.
- Roll out the remaining dough and cut out shapes of your choice with cookie cutters.
- Place on top.
- Bake for 15 min in a preheated oven at 200°C.
- Then sprinkle sliced almonds on top and bake for another 30-40 min at 180°C.
