Blueberry pie

Last Friday I couldn’t resist buying a liter of fresh blueberries at the Farmers’ Market. I love these wild berries for they taste way better than the store-bought ones and are a perfect snack. Finally, they make an amazing pie filling!

Here is a simple recipe to follow if you fancy a tasty summer dessert:

For the Dough: 

  • 200g unsalted butter (at room temperature) 
  • 300g all-purpose flour 
  • 1/2 teaspoon salt 
  • 25 g sugar 
  • 3 tablespoons water 
  • 1/4 teaspoon baking powder 

For the Filling: 

  • 500g fresh wild blueberries 
  • 3 teaspoons cornstarch 
  • 80g sugar 
  • 2 tablespoons lemon juice

  1. Combine all the ingredients to make a dough.
    Make sure to always sift flour and baking powder. Your dough will have a perfectly light and smooth texture. 
  2. Refrigerate the dough for at least an hour.
  3. In the meantime you can prepare your filling: wash the blueberries and carefully mix them with all the remaining ingredients.
  4. Roll out the chilled dough and place it into your pie dish, push it to the sides. Save a little bit to put on top!
  5. Spread the filling evenly.
  6. Roll out the remaining dough and cut out shapes of your choice with cookie cutters.
  7. Place on top.
  8. Bake for 15 min in a preheated oven at 200°C.
  9. Then sprinkle sliced almonds on top and bake for another 30-40 min at 180°C.
